I have been on the Autoimmune Protocol since 2012 to manage my Hashimoto’s disease (an autoimmune disease attacking the thyroid gland). Along the way, I have picked up a few tricks to make AIP easier, more simple. Simple is important because it is the gateway to sustainability. And my goal has always been to stay long-term on a healthy, healing diet to manage my thyroid condition and feel my best.

Wanting to follow a healthy diet is one thing, but making it happen day-in-day-out can be quite challenging! Life happens. Or sometimes we don’t feel like cooking a whole meal from scratch. We ‘d rather plop something on a plate, push the reheat button on the microwave, and sit down for a Netflix marathon.

Yep, it happens to me too.

And yet I have managed to stay on the Autoimmune Protocol since 2012 (with a few reintroductions under my belt). What is my secret weapon? What keeps me going?

The answer is quite simple: be prepared and always have AIP-friendly foods available to eat.

What does it mean to be prepared?

Having some ingredients in the fridge isn’t enough for me. I can just look at them and not feel any inspiration at all to cook! Batch cooking, on the other hand, has helped me a lot.

The art of batch cooking can be broken down into 3 steps:

  1. Select a few recipes you would like to eat for the next few days.
  2. Make a shopping list with all the ingredients you’ll need and go shopping.
  3. Make some time in your schedule to cook these meals in one big session.

This way, you work once, and then you get to eat two, three, four times! All you have to do is warm up the leftovers.

    I’ve been wanting to try Paleo on the Go ever since I first heard about them! Winning this would be perfect for that last month of pregnancy when no one feels like batch cooking or ya know, leaving the bed/ couch. Everything sounds amazing but I most want to try the Creamy Chicken with Bacon Alfredo!

    I have been wanting to try Paleo on the Go since I was first told about them. Several items look delicious but my finest go to would probably be their pot pies.     It’s so rough to choose a favorite! Juicy Loosey? The “cheese” I shred over everything? The amazing Moo Shu? In the long run, it’s probably the Tacos with Salsa Verde. I like being able to easily participate in “Taco night” !

    My husband and I have been enjoying POTG for many years. We even got an extra freezer in the basement to stock up. And it’s perfect for when we get back from vacation and haven’t yet had time to grocery shop. And perfect for the nights when we don’t cook. LOVE this food!!!

    I’m newly diagnosed and struggling to know what to make. I’m overwhelmed and feel like all I can safely eat is salad. Seeing the Paleo on the go options made me so excited. The Phoenix package looks amazing!
