First food pictures, first blog post and I am really nervous. I have done many hard things in my life, like moving from Belgium and starting a new life in this beautiful country, raising three kids almost by myself when my husband was traveling for his corporate job, starting our own consulting business, and somehow I have stage fright today! I have been reading a lot of “how to” and “steps to a successful blog” from experienced bloggers and they all say that it takes time to find your own voice and perfect your skills. So here I am, stepping out of my comfort zone. And at the same time I am convinced this is going to be a lot of fun!
I will start easy with a delicious snack my kids love to eat when they get back from school. I always keep a bowl full of Granny Smith apples in our kitchen as I love their tartness and they contain less sugar than other apples. For this quick and easy recipe, you will need some sunflower seed butter (I like this one), raw cacao nibs (I am using these from Amazon) and shredded coconut. These garnished apple slices are full of nutrients and packed with energy; don’t eat these right before bed!
- 1 Granny Smith apple
- 2 TBS sunflower seed butter
- 1 TBS raw cacao nibs
- 1 TBS shredded coconut
- Slice thinly your apple to obtain 6 evenly cut slices
- Spread the sunflower seed butter on each slice with a knife
- Sprinkle raw cacao nibs over the sunflower seed butter
- Sprinkle shredded coconut on top to finish
- Voilà!

Yum! Apples are absolutely one of my favorite foods. Right next to chocolate. Putting them together makes this a dream 🙂

Hello Dawn,
No, this is the only recipe on my site that isn’t strict elimination AIP. Sunflower seed butter is a reintroduction. But it is still a paleo recipe!
