Ingredients
  • For the salad:
  • 1 small jicama (about 1 pound)
  • 1 small cucumber (about 12 ounces)
  • 1 large mango
  • 1/2 cup firmly packed, finely chopped cilantro
  • 2 scallions, finely chopped
  • Juice of 2 limes
  • Citrus Vinaigrette
  • For the Citrus Vinaigrette:
  • 1/2 cup extra virgin olive oil
  • 1/3 cup freshly squeezed orange juice
  • 2 tablespoons freshly squeezed lemon juice
  • Pinch of fine sea salt
Instructions
  1. For the Vinaigrette: Combine all ingredients in a glass jar with a tight-fitting lid. Refrigerate until needed. Shake well before using.
  2. For the Salad: Peel and julienne jicama. Cut off both ends of cucumber and thinly slice. Peel, pit, and julienne mango. You can speed up the process by using a mandoline slicer with a julienne blade.
  3. Combine jicama, cucumber, mango, cilantro, scallions, and lime juice in a large bowl. Refrigerate until needed.
  4. Add Citrus Vinaigrette just before serving.
