Apple Cider Vinegar Gummies and a simple AIP Halloween Spread

Halloween is right around the corner and I have prepared a fun and super simple Halloween spread for you! Simple is my middle name and I love recipes and ideas that don’t take too much time in the kitchen.

This fun Halloween spread fits the bill perfectly with these simple goodies:

  • Apple Cider Vinegar Gummies
  • Sea salted caramels (AIP-compliant)
  • Vanilla marshmallows (AIP-compliant)
  • Activated charcoal marshmallows (AIP-compliant)

These cute Halloween gummies shaped in the form of little pumpkins are made with apple cider vinegar, apple juice, honey, and gelatin powder. Each of these ingredients is so good for your gut and overall health in so many ways! I used these silicone molds to shape the gummies.

Apple cider vinegar (raw) contains strand-life enzymes beneficial for your gut, promoting digestion and ph balance, keeping blood sugar in check, and containing potent antioxidants.

Honey is recognized for its anticancer and antitumor properties, prebiotic properties, as well as antimicrobial and cardiovascular benefits.

Gelatin powder has a predominant place in the Autoimmune Protocol for its gut-healing properties. Check out this post to learn more. Make sure you use gelatin powder for this recipe, not the collagen peptides! Only gelatin will make your gummies solidify and gel.

The sea salt caramels, vanilla marshmallows, and activated charcoal marshmallows are my go-to AIP-compliant treats throughout the year. I reach for them each time I want/need a little something special and sweet. They come from Sweet Apricity.

Apple Cider Vinegar Gummies

Equipment

  • silicone molds or baking dish

Ingredients
  

  • ½ cup apple cider vinegar (raw)
  • ½ cup apple juice
  • 3 tablespoons honey
  • ⅓ cup water (at room temperature)
  • 2½ tablespoons gelatin powder

Instructions
 

  • Combine the apple cider vinegar, apple juice, and honey in a saucepan. Heat up over medium heat for a few minutes and stir well. You don't need to boil the mixture. Just make sure all the ingredients are combined, then you can turn off the heat.
  • Fill a small cup with ⅓ cup of water and sprinkle the gelatin powder over the liquid. Let the gelatin bloom for a minute before whisking vigorously, ensuring the gelatin powder is completely dissolved and there are no clumps. The mixture will become gel-like.
  • Add the gelatin mixture to the saucepan and whisk well to combine, making sure the gelatin is completely dissolved. (Now is the time to taste the liquid and adjust the sweetness to your liking. I like my ACV gummies on the sour side, but you might prefer them a little bit more sweet!)
  • Pour the liquid into silicone molds (or a glass dish) and refrigerate for about 6 hours until the gelatin is firm. To unmold, push under the mold and the gummies will pop out.
  • Store the gummies in an airtight container and refrigerate up to 7 days.

    I am really excited to try this. I have coconut vinegar with hawthorn berries and rose hips marinating in it that I’m going to use for an extra dose of medicine. Thanks for the recipe.

    Can I replace the apple cider vinegar with anything? Last time I tried apple cider vinegar I had horrible reflux. Thanks

    What is the serving size ? how many gummies is equal to a daily dose of acv ?

      For anyone later since this is an old comment, there are 8 Tablespoons of ACV in the recipe. Molds are of varying sizes so 1/8th of your output is a single Tablespoon.
