Simple French Paleo : Flavorful Allergen-Free Recipes for the Autoimmune Protocol - A Squirrel in the KitchenI am proud and excited to share with you my new cookbook “Simple French Paleo : Flavorful Allergen-Free Recipes for the Autoimmune Protocol”. I poured my heart into this book and it is a testimonial to my own healing journey and the incredible therapeutic power of real, whole food. Deciding to take your health into your own hands is a momentous decision and it is not without its challenges. But eating for your health doesn’t have to mean bland, tedious meals!

How the cookbook was born:

In 2009, I developed Hashimoto’s disease. It was during this time of upheaval that I adopted the Paleo Autoimmune Protocol. I was desperate to feel healthy and get back to the business of living. And living well! I was not interested in half a life. I found myself making radical changes to the way I ate and to be honest, it was difficult. I could no longer just grab anything off a shelf and be safe. I read labels and thought very carefully about what I was putting into my body. Would it cause me pain? Would my inflammation sky- rocket because of one tiny little ingredient I could not pronounce? The world of eating was no longer simple, and I longed for simple.

My struggle led me back to the traditional French cooking of my youth and I rediscovered how simple and honest food could be. I was reminded that fresh, real food is at the heart of life and that even as I struggled with an autoimmune condition, I could still enjoy the pleasures life had to offer.

With this book, I hope to remind you of the same thing. These pages contain a wealth of soul-soothing food. Each and every recipe is compliant with the elimination phase of the Paleo Autoimmune Protocol as described by Sarah Ballantyne in her book, The Paleo Approach. In addition to the recipes, I have included details about my own story, about the Paleo Autoimmune Protocol (also referred to as AIP) and how to incorporate its tenants into your life, and tips on how to create an AIP kitchen.

It is my hope that this book will help you on your journey toward true health and a full, rich life.

Of course, I’m also very excited to share so many delicious French recipes with you.

I hope you find them as nourishing and enjoyable as I do.

Serves: 4
Ingredients
  • ¼ cup extra-virgin olive oil
  • 2 medium golden beets (about ½ pound), peeled and roughly chopped
  • 3 medium carrots (about ½ pound), peeled and roughly chopped
  • 4 cloves garlic, minced
  • 1 large yellow onion (about ¾ pound), peeled and roughly chopped
  • 1 medium yellow summer squash (about ½ pound), chopped
  • 1 medium zucchini (about ½ pound), chopped
  • 1 tablespoon dried oregano
  • 1 tablespoon minced fresh rosemary
  • 1 teaspoon fine sea salt
Instructions
  1. In a large saucepan, heat olive oil over medium-low heat. Add beets, carrots, and garlic. Cover and cook for 20 minutes, stirring occasionally.
  2. Add onion, yellow squash, zucchini, oregano, rosemary, and sea salt. Continue cooking, covered, until vegetables are tender, about 20 minutes.
  3. Check seasoning and adjust salt to taste. Serve hot or cold.
Notes
Add 10-15 minutes to the cooking time if you prefer your ratatouille well-done over crisp-tender.

    My goodness, I am crazy excited to cook from this book! Based on the title alone, I tried to add it to my amazon cart (of course then I realized it was only pre-order and I had to wait).
    Well now the time is here! Your cookbook looks gorgeous, full of delicious recipes that will help me “try again”. I’m doing well on paleo, but I’want to thrive; flavor and variety is my biggest hurdle. I suspect your book could help me add some of both to our meals, and help me succeed with AIP.

      It is a cookbook that uses easy to find ingredients; the kind that you can find easily at your local grocery store. For the dessert section, I am using tigernut flour in a couple of recipes though, along with arrowroot flour, and coconut four (very little). I hope this helps! You will love the cookbook 🙂

    I have several autoimmune issues and have done every type of medication there is including terrible things like Cytoxan. I started seeing a new doctor who recommended the AIP way of eating. I started a little over a month ago. I met with my rheumatologist this morning and he couldn’t believe how great I look and how great I feel. I finally am starting to feel like myself. My illness was starting to take away my cognition which I pride myself on and I’m starting a new job soon where I will really be using my brain. I have loved getting recipes from cookbooks, the AIP support group and websites such as yours. I would love a copy of your book to help me continue this journey.     J’ai faim! Pouvez-vous m’aider avec votre livre de cuisine? Took 5 years of French, hope I remembered it well enough. I remember asking for a bathroom in France and being shown to a shower room, no toilet! Must have needed one more year of study!

    Very happy to see that you have a cookbook! Your recipes are wonderful and now to be able to have them in a hardcopy book is great. The cover of the cookbook is beautiful and very inviting to want to dive in and see what delicious foods can be found.. I have been nightshade free for 20 some years … way before I ever had a clue about paleo much less the healing benefits of AIP. Back then it was a challenge to figure out how to cook that way. resources were sooo limited on the subject. Now we have lifesaving books like your cookbook.. Really looking forward to when I can hold one in my hands to read.

    Congratulations! Looks like the final product was worth all that hard work. I have had vulvar lichen sclerosus since my early 20s, and after my pregnancy, things are looking grim. I am slowly dropping some of my biggest offenders and attempting to transition to full AIP. It’s not so easy, but many of your recipes have officially made it into the weekly rotation, so I thank you for that already. Best of luck with your gorgeous cookbook!!     Dear Sophie,
    I purchased your cookbook one week ago and want to leave you a thank you note.
    The first recipes I tried are the following:
    – Rilettes (I used my pulsing blender instead of forks)
    – Crisp Oregano Crackers
    – Creamy Brokkoli Mash
    – Gingerade
    All of them functioned really well at my side and were yummy.
    I am looking forward to trying more the next days.
