I love European food culture. I've been enamored by the beauty, the food, and the joy European people take in sitting down to eat together since I first traveled there at 19 years old. As you can imagine, the moment I opened Simple French Paleo, I was transported. Sophie's incredible cookbook reminded me that the most beautiful, joyful things are also usually the most simple and uncomplicated. With her love of Provence and her Belgian roots, she shows us that enchanting European food culture can easily be a part of a healing AIP journey. While you are preparing one of her incredible recipes, you can also browse the gorgeous photos of the French countryside . . . delighting all your senses and helping rejuvenate your body. — Angie Alt, author of Alternative Autoimmune Cookbook and co-author of The Autoimmune Wellness Handbook
