Ingredients
  • 1 head Bibb lettuce, leaves washed and torn
  • 2 cups purslane leaves (thick stems discarded)
  • 1 avocado, peeled and sliced
  • 1 big peach, sliced
  • Minced fresh chives, for garnish
  • Vinaigrette:
  • ⅔ cup extra-virgin olive oil
  • ⅓ cup apple cider vinegar
  • ½ teaspoon fine sea salt
Instructions
  1. In a large bowl or on a serving platter, combine Bibb lettuce, purslane, avocado, peaches, and chives.
  2. In a separate bowl, whisk together olive oil, apple cider vinegar, and salt.
  3. Pour vinaigrette over salad as needed right before serving.
