Ingredients
  • 1 pound leeks, chopped
  • 1 can full fat coconut milk (13.5 fl oz)
  • 1 teaspoon dried sage
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon fine sea salt
  • 1 rectangular pyrex dish (6x9)
Instructions
  1. Warm up the oven to 400° F.
  2. In a large bowl, combine all the ingredients and mix well.
  3. Pour in a gratin dish and bake in the oven for 40-45 minutes, stirring occasionally.
