Oven Roasted Butternut Squash

Ingredients
  • 1 medium butternut squash
  • 1/4 TSP salt (I like to use pink Himalayan salt)
  • 1/2 TSP cinnamon
  • Olive oil
  • Bake in the oven at 350F for 30 minutes.
Instructions
  1. Remove both ends with a serrated knife.
  2. Cut the squash in half, lengthwise down the middle.
  3. Scoop out the seeds with a spoon.
  4. Peel the skin off with a vegetable peeler.
  5. Dice the flesh in little 1" cubes.
  6. Spread on a baking sheet (that you will have previously oiled).
  7. Season with salt and cinnamon.
  8. Drizzle with olive oil.
  9. Place in the oven at 350F for 30 minutes or until vegetables become tender.
